Momento Mori
New Zealander Dane Johns started his career in wine working for Bill Downie in Victoria, later moving on to start his own label with fruit sourced from just a few organic growers throughout the region. All of Dane’s wines are as hand-made as can be. Small ferments, wild yeast, no new oak, no mechanical pumps, no fining, no filtration and no additions.
As its namesake suggests this cuvée is an eclectic blend of components. It is crafted each year to resemble a style of wine Dane reveres (an energetic & complex light red). This is a cuvee which reflects seasonality and the experimentations undertaken with this particular vintage.
The wine drinks like a Ploussard or a savoury and fresh rosé. A very unique and cohesive wine, light, fresh & very energetic with loads of complexity and structure. Drink slightly chilled.

Grapes 60% Schioppettino, 20% Syrah & Fiano (co-ferment) & 20% Greco.

Winemaking Manual harvested, Schioppettino fermented in stainless steel, Greco fermented in stainless steel with 9 months on skins. Syrah & Fiano are co-fermented in stainless steel then transferred to old burgundy barrels (for 1 year, to allow the wine to breath). The 3 resulting wines are blended and left together for 6 months to settle and harmonize. Unfiltred and unfined and no added SO2.
